- Preheat oven to 350° F. Line Sheet Pan with Sheet Pan Liner.
- Using a stand mixer (with paddle attachment) or hand mixer, beat mix with butter, egg, and vanilla extract on low speed until well combined.
- Transfer half of dough to another bowl; fold in semi-sweet chocolate chips to dough in existing bowl.
- In other bowl with remaining half of dough, using a spatula or stand mixer, stir in cocoa powder until combined. Fold in white chocolate chips.
- Using a spoon or your hands, scoop 1 tbsp of each dough, then roll them together to make a ball. Repeat with remaining batter; you should have 12 balls. Arrange on pan 1" apart and lightly press down on them to flatten slightly.
- Bake 12–15 min, or until lightly golden on the edges and set in the middle. Let cool on pan 5 min. Transfer cookies to Cooling Racks and cool completely.
