Risotto gets a bad rap for being a tedious and tricky side dish. We’re here to say, “No more!” All you need are a few ingredients, 20 minutes, and a microwave—no culinary skills required. This mix swaps out traditional Arborio rice for whole grain, tricolour quinoa, packing in extra fibre to keep you fuller for longer.
- In Round or Multipurpose Steamer, stir mix with hot water. Cover; microwave on high 17 min, or until tender.
- Remove from microwave; stir in peas and butter. Cover; let stand 3 min, or until excess liquid is absorbed.
To make on the stovetop, add Tuscan Herb Risotto Mix and 2 cups hot water to a medium saucepan. Cover; bring to a boil, then reduce the heat to low. Simmer until quinoa is tender, about 30 min. Stir in peas and butter. Let stand, uncovered, for 5 min.
Serve with 4 oz (113 g) lean protein, and 2 cups leafy greens with 1 tbsp Epicure Dressing.
